Chicken and Veggie Teriyaki Panini!

You don’t have to deprive yourself of SANDWICHES- just pack them with nutrition and satisfy that afternoon hunger! This panini is filled with vegetables—spinach, cauliflower AND broccoli but somehow maintains the look and feel of a sandwich. Yum.

Ingredients:

  • 1/2 head cauliflower, riced
  • 2 eggs
  • 1/2 cup flour
  • 1/4 cup cheese
  • 1 tsp sweet basil
  • salt and pepper to taste
  • 1 tsp olive oil
  • 1 lb chicken boneless chicken breast
  • 2 cups chopped broccoli
  • 1 cup chopped snow peas
  • 1/4 cup teriyaki sauce
  • Hawaiian bread buns
  • fresh spinach leaves
  • cheese slices
  • butter to spread
