The Light Breakfast Wrap is an easy and clean recipe to get you started and keep you full for hours! Note, there is no cheese or sour cream. The salsa verde and the egg adds richness to the wrap. I like to use extra fluffy tortillas, which are about 100 calories each. I also went for crunch in the iceberg lettuce but you could easily punch up the nutrition with kale or spinach.

For the Light Breakfast Wrap, you will need:

  • 2 small, extra fluffy tortillas
  • 1 egg, scrambled
  • 1/2 chopped medium tomato
  • 1 cup chopped lettuce
  • 3-4 slices of cucumber, chopped
  • 2-3 tbsp Hyvee brand green roasted salsa verde

Directions:

  • Scramble the egg, set aside.
  • Lay out tortillas to be filled.
  • Split scrambled egg in half and layer on each tortilla.
  • Top with tomato, lettuce and cucumber
  • Roll tortilla as tightly as you can.
  • Finish with dollops of green roasted salsa verde
